Artichoke Chicken

Stole this recipe from one of my best friends, you can find the original recipe on their site, www.fit2fat2fit.com and a lot of other delicious, healthy recipes you will love!

This recipe was so easy, and I took 3 minutes and threw the ingredients in the crockpot on Sunday before my 3 hour block of church, and it was so nice to come home to a hot and ready meal for my family!  You will love this zesty and hearty meal!

1 bag frozen chicken tenderloins
1 jar costco's artichoke hearts (juice included)
1 jar costco's 4 bean salad (drained)

Throw every thing in the crock pot and cook for a few hours on high.

Spinach Wrap

I am such a sucker for going to those high end bakery's and paying way too much money for this exact type of meal.  This creation reminds me of my favorite eatery in Virginia, The Joyful Spirit Cafe. So of course I was so pleased when I came up with this replica! If you have the right ingredients, you can eat like a queen everyday! :)
This chicken wrap is one of my favorite wraps.  You will thoroughly enjoy this one!

Ingredients:
Spinach Wrap Tortilla (found with the flour tortillas)
Baby spinach
Cooked cubed chicken
Diced Avacados
Low-fat cream cheese
Costco's Pineapple habenero salsa
Diced roma tomato

How to Assemble:
Layer softened cream cheese on open tortilla
Spread a little layer of the salsa on the cream cheese.
(warning, this stuff has quite the kick, start of with a smaller amount..)
A small layer of spinach (cut stems off)
The throw on the rest of the ingredients.
Roll up and ENJOY!

*I served this with my homemade tomato basil soup.  You can find that recipe in the side bar under the label of 'soup'...

Spicy Chicken Avocado Chicken Enchilada's

I have always LOVED chicken enchilada's but never found a recipe that I have found and made that has been a keeper at our house.  A big thanks to Ruthie, a blogger I follow, for sharing a unique blend of shredded chicken, cilantro, avocado  cheese and a spicy topping.  A lighter, fresh take on the expected chicken enchilada.

I didn't have all of the listed ingredients, so I improvised a bit, but loved the result, so I'm pretty sure I will stick to the way I made it, was a bit easy too, with less steps.  Check out her original recipe on her site, www.ruthiehart.com, I will list my altered one.




Ingredients
For the sauce
I jar Pace's Garlic & Lime Salsa Verde
1 tsp cumin
1/4 tsp salt
1/4 tsp pepper
1/4 cup chopped cilantro
1/2 cup fat free sour cream

For the enchiladas

2 Cans Kirkland shredded chicken
1 cup colby jack cheese
1 cup spicy jack cheese
3 avocados, peeled and chopped into bite sized pieces
10 whole wheat tortillas (I always use whole wheat for my mexican dishes.  They are healthier, and more substantial to hold all the yummy stuff.)

1. In large bowl mix together chicken, cheese, avocados and add a little salt and pepper, mix and then layer in center of whole wheat tortilla, roll up and place in sprayed dish.  Line up as many as you can fit in baking dish.

2. Mix sauce ingredients together and pour over tortillas.
3. Top with a little more cheese to your cheesy likeness. :)9. Top with remaining sauce and cheese
10. Bake at 375 for 20 minutes

Cilantro Lime Chicken Salad

Wow!  This meal was soooo yummy, with its perfect combo of the chicken, avacodo salsa and cilantro lime dressing.  I had it last night, and I wish I would have made more to eat it again today!  It was that yummy!
Cilantro Lime Chicken
2 tablespoons minced fresh cilantro 2 1/2 tablespoons fresh lime juice
1 1/2 tablespoons olive oil
4 (6-ounce) skinless, boneless chicken breast halves
1/4 teaspoon salt
Cooking spray
To prepare chicken, combine first 4 ingredients in a large bowl; toss and let stand 3 minutes. Remove chicken from marinade; discard marinade. Sprinkle chicken evenly with 1/4 teaspoon salt. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Add chicken to pan; cook 6 minutes on each side or until done.
Avacado Salsa
1 cup chopped plum tomato (about 2)
2 tablespoons finely chopped onion
2 teaspoons fresh lime juice
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper 1 avocado, peeled and finely chopped $
To prepare salsa, combine tomato and next 4 ingredients (through pepper) in a medium bowl. Add avocado; stir gently to combine. Serve salsa over chicken.

Creamy Cilantro Lime Dressing:

2 tablespoons freshly chopped cilantro leaves
1 tablespoon apple cider vinegar
1 teaspoon lime zest
1/4 cup lime juice
1/2 cup sour cream
1 clove garlic, smashed
1 tablespoon honey
1/8 cup extra-virgin olive oil
Salt and freshly ground black pepper
Special equipment: blender
Blend all the ingredients except the olive oil until smooth. While machine is running, slowly drizzle in the oil until incorporated. Season, to taste, with salt and pepper.

Serve over brown rice as follows:
brown rice
chopped romaine lettuce
cut up chicken
salsa
dressing
The meal is around 500 calories and serves 4.

Chicken and Broccoli Alfredo

This was so easy with just a few ingredients!



8 oz. Linguine
(I prefer Ronzoni Garden Delight, it makes the dish more colorful and healthy.)
2 tbsp. butter
1 can cream of mushroom soup
1/2 cup parmesan cheese
1 cup fresh broccoli flowerettes
1 lb cubed chicken
1/2 cup milk
1/2 tsp pepper

Cook linguine according to pkg. directions. 
Add broccoli for hte last 4 minutes of cooking time. 
Drain. 
Heat butter in skillet. 
Add Chicken and cook until browned, stirring often. 
Add soup, milk, cheese, pepper and linguine mixture with broccoli. and heat through. 
Serve with additional cheese.

Chicken and Pasta Primavera

    This is a really easy, impressive meal and a nice change to the normal pasta rut I find myself in.  I hope you enjoy this great flavor!

1 TB butter
3/4 lb bonless chicken breast, cut into thin strips
2 cloves garlic, finely chopped
1 cup water
1/2 dry white wine
1 package KNORR recipe classics spring vegetable soup, dip and recipe mix
1/2 tsp fresh group pepper
8 oz linguine, cooked and drained
grated parmesan cheese

- In a large skillet, melt butter over med heat and cook chicken and garlic for 5 mins.
- Stir in water, wine, recipe mix and pepper.  Bring to a boil over high heat, stirring constantly.  Reduce to low and simmer 5 mins or until chicken is no longer pink in center.
- Toss chicken mixture with hot linguini.  Serve with grated cheese.

Catalina Chicken & Rice

Brandon Loved this dish. I only liked it ok. But is was very very easy, and has veggies, meat, and rice all in one. Try it at least once to see if you like it too. :-)

1 lb. boneless skinless chicken breasts, cubed
3/4 cup Catalina Dressing
1/4 cup soy sauce
1/2 tsp. garlic powder
1 package frozen mixed veggies, thawed or 3 cups cute up fresh veggies (which I always prefer) brocolli and peppers are really good with the sauce.

Cook and stir raw chicken in dressing, soy sauce and garlic powder for 5 minutes. Ad veggies and cover. Simmer 7 mins or until veggies are crisp and tender and chicken is cooked through. Stirring frequently. Serve over rice.

Shredded Chicken Taco's

Goodness were these GOOD!!! Because we stewed the chicken the meat was so so tender! It was heaven eating these!!!
Stew chicken like shown in previous post.
Put chicken back in pot and add chicken taco seasoning
a can of salsa (add little by little until the consistancy you like.)
and a little more than a half a cup of chicken broth.
Heat through.
Add to flour tortillas with lettuce, tomatoes, avacados, lime juice, sour cream and salsa.

Stewing a Chicken

I will admit. I had no clue how to do this until this past weekend. My sister taught me and it is so yummy and tender! I'll be doing this a lot from now on!
Fill a pot of water so its berely covering the chicken.
Cut a few slits in the chicken and add onion, salt and pepper, and a few boullion cubes.
Put water to a boiling then let simmer on low for a few hours.
Jenny likes to flip the bird half way through so its tender throughout.
Peel off the skin and then start shredding the meat.
To use the chicken broth do as the picture shows a few times to catch all the extra stuff that fell off the bird. You can make chicken soup or freeze the broth for the next time you need it.
